Mount Mansfield Creamery, Patrolman's Blues

Patrolman’s Blues is a raw cow milk cheese that is hand ladled into the forms and left to drain overnight, then flipped to ensure even drainage.  After a few days the cheese is hand-pierced to allow oxygen in and the p.roqueforti to grow.  It is aged for 90 days.  Patrolman’s Blues is a truly hand-crafted, buttery and robust blue cheese that is a beautiful addition to any cheeseboard.
