Eden Specialty Ciders, Perry (375 ml)

Eden's Specialty Cider's Wild Perry is made by wild fermenting seedling pears grown by Yoder Farm in Vermont. Harvested and pressed in the Fall of 2023, it was allowed to ferment spontaneously from ambient yeasts. Finished in the Pet Nat method - meaning it was bottled during primary fermentation, the last bit of fermentation happening in-bottle for a natural sparkle. 

This perry, unusually, has bright acidity and very little perception of sweetness. It is dry, complex and earthy with gentle astringency. The flavor has notes of green apple, acacia, white flowers and chalk.
