Brasserie Cantillon, Ashanti

Two-year-old Lambic infused with Poivre Noir des Gorilles ("Gorilla pepper"), a rare, wild black pepper sourced from the Ashanti region of West Africa.  No spicy heat in this one: instead, the pepper introduces floral, woody, and earthy notes that balance beautifully against the tart, funky base of the Cantillon Lambic.  This is the "little sister" to Cantillon’s famous 2022 Zwanze project. It uses the exact same recipe and pepper source, however Ashanti is scaled back on the pepper ratio to let the natural characteristics of the Lambic shine through.
