Brasserie Cantillon, Ashanti

Two-year-old Lambic infused with Poivre Noir des Gorilles ("Gorilla pepper"), a rare, wild black pepper is sourced from the Ashanti region of West Africa.  Despite being made with pepper, it does not carry spicy heat. Instead, it introduces aromatic, floral, woody, and earthy notes that balance beautifully against the tart, funky base of the Cantillon Lambic.  This is the "little sister" to Cantillon’s famous 2022 Zwanze project. While it uses the exact same recipe and pepper source, Ashanti is scaled back on the pepper ratio to let the natural characteristics of the Lambic shine through.
